This grill is great for long smoking. You can add charcoal at any time, just be careful not to add too much or keep the lid up for too long. Temperature control is key to long smokes. I have learned to adjust the addition of charcoal at the appropriate to about once per hour but each smoking experience is different. Like any other charcoal grill, you will need to periodically add more charcoal to maintain the proper heat level. Normally, I will add charcoal to lump charcoal 15 to 20 minutes before the temperature would begin to drop. This helps maintain the proper temperature at all times. This grill is great for ribs, brisket, pork shoulder, and leg of lamb.
