Grilling on a budget, in the beginning, may take some discipline to get the hang of. When I go shopping, I look for any items that may be marked down, this does not mean bad quality. Try to use the product as soon as possible for the best flavor.
The marinade I use will depend upon the meat I am grilling. A denser meat, such as beef, requires a longer time to marinate while fish and chicken do not require that much time. In fact, fish only requires about 30 minutes.
When I first started grilling, accurate thermometers were not available but the technology has improved them to the point where it is better to use one for that perfect grilling experience.
